Walnut and Date Muesli

I have been making a big jar of this muesli up each week, and it is well and truly gone by the end of it. I winter time I tend to stick to porridge in the mornings just for the comforting warmth factor but this muesli is great to have made up and ready to go for a quick breakfast before a day at work, or even a snack after tea with some natural yogurt if you feel the need. 😉

So this is my method for a super yummy, nearly raw, nutrient and fibre rich muesli to start the day. I like to pour just a little boiling water over before serving….. it softens the cereal and makes it kind of creamier somehow.

7 cups jumbo oats
2 cups dates – soaked in boiling water for ten minutes and drained
1/2 pumpkin seeds
1/2 cup sunflower seeds
1/2 cup linseeds
1 cup shredded coconut
1 1/2 cups raisins
2 cups walnuts ( I used these because they go really nice with the dates and there are walnut trees around Blenhiem where I can pick them up for free – bonus! But you could use any nuts you have available)

Put 4 cups of the jumbo oats into the food processor and add the drained dates, blend them until the dates are fairly well chopped into the oats. Add the walnuts and pulse a couple of times. Now mix in all the other bits and bobs and the remaining jumbo oats and dig into a big bowl with some chopped fruit.
