You know those delicious little sweet and sour pickles in a Macdonalds Cheeseburgers??????? I love those little pickles, but the burger is just too far down the health scale to eat on any sort of regular occasion. Actually it’s so far down it’s in the negatives…… but the pickles!
Well in my bid to use up my glut of zucchini’s I accidentally made these the other day and they taste just like those little pickles! STOKED! And they are super simple and quick, even better.
All you need:
1 medium zucchini
1 TBSP salt
1 cup white wine vinegar
1/3 cup sugar – I know, I know, sugar is evil, but it’s only a little and your not eating it all in one go, so calm down.;-)
1 tsp tumeric powder
1/2 tsp cracked pepper
1 tsp salt
2 cloves garlic – finely sliced
1 jalapeno – finely sliced – if desired
handful of fresh dill leaves
Super finely slice the zucchini and put it in a bowl, sprinkle with a tablespoon of salt and just cover with water. Allow to sit for about half and hour, then drain and lay on a teatowel and pat dry.
In a pot bring the vinegar, sugar, tumeric, pepper, salt, garlic, and jalapeno to the boil.
Now lay some dill in the bottom of a wide mouth jar and stack in the sliced zucchini. Layer it up with dill and then pour over the hot vinegar mixture. Put a lid on and allow to cool. Now taste and be amazed! 🙂
Store in the fridge and use in sandwiches, or with meat or on salads or on cracker with cheese or just on their on or……you’ll work it out.
