Sometimes, usually around 8ish in the evening, I just get a hankering for some little sweet treat. And usually, because I just don’t even buy sweet treats anymore, there is nothing in the house…. unless you think outside the box and make something.
That is how we came up with this little bowl of deliciousness, the recipe makes just enough for two, so try it once the kids are in bed. 😉
6-7 dried dates
3 TBSP water
Simmer dates in water with a lid on for about 1-2 minutes, until soft and then puree, then add
1 TBSP Coconut oil
1 TBSP Almond Butter
1 TBSP Cocoa
pinch of salt
Melt all this together gently and then blend (I used my stick blender) until really smooth. Add a couple of TBSP of warm milk or coconut cream to thin down if you like.
Pour it over a sliced banana in each bowl and sprinkle with some nuts or whatever you have on hand for a bit of nice crunchy texture. I used LSC (linseed, sunflowerseed and chia seed blend) sesame seeds and walnut halves.
There you have it, simple as but it hit the spot, and the bonus feature is you get all those “brain-boosting” benefits** of coconut oil in the form of dessert.
