This stuff is seriously delish!!!! We had it a couple of nights ago on wraps with Asian Inspired Tofu Fritters (the recipe I posted a couple of days back) but it would be brilliant on a vege platter, with some warm crusty bread, used instead of mayonnaise on a pile of coleslaw, put in a sammy with cold meat and salad….. etc etc.
And this is how simple it it:
1/2 a tin of drained Cannellini Beans
1 Big TBSP Peanut butter ( I use Pics because it is pure in simple peanuts, not overloaded with sugar and oil etc)
1 clove of garlic
1/2 tsp fresh ginger- grated
2 tsp naturally brewed soy sauce
Juice of 1 lime
1 TBSP natural yoghurt (optional, leave it out for dairy-free)
Blitz everything together until creamy in a food proccessor or with a stick blender. Done.
