Now what I have to post is not that healthy, not that scroogy but it sure is tasty and we are in the mood to celebrate birthdays, happy/sad endings and exciting new beginnings – – so, cake it is! With whipped cream and caramel sauce YUM!
The cake was an idea I had rolling around in my head and so I just kinda made it up as I went along, here is what I did (I think) 🙂
Cut into chunks 200g Dried figs, put in a mixing bowl
Add 3/4 cup chocolate chunks, 3/4 cup walnuts, 1 cup of brown sugar and 170g melted butter. Stir well, this will melt the chocolate chips slightly, but that is the plan. Then add 3 big free-range eggs, 2 TBSP greek yogurt and about 1/2 a cup of milk.
Lastly stir in 1 1/2 cups flour, 1/2 tsp salt and 2 tsp baking powder.
Pour into a greased lined cake tine and bake in a moderate oven until cooked through.
Serve warm with whipped cream and caramel sauce.
My caramel sauce recipe is super quick easy and delish
Just melt 75g butter in a pot along with 3 TBSP Brown sugar. Keep stirring until well melted and just about boiling then stir in 1/4 cup of cream. Easy
