Get some veges on your pizza

Can’t beat homemade pizza for a great summer dinner aye? It is always a bit of a challenge though working out how to get veges on them so here are a couple of slightly out of the norm ideas you might like to try. It is good to think out of the box and just give it go, just cos you haven’t heard of anyone else doing it doesn’t mean it is not a good idea 🙂

Number 1 : Lemony Silverbeet with Eggs and Mozzerella

First, bring a pot of water to the the boil with some salt and blanch whole leaves of Silverbeet for about half a minute. Quickly drain and run under cold water to cool.
Put them in a bowl and drizzle them with a little olive oil and some lemon juice just like you are dressing a salad.
Spread some nice garlic sauce on your pizza base, scatter/lay around the dressed silverbeet leaves. Crack on a few nice free-range eggs and dot with chunks of mozzerella cheese.
Season with salt and pepper and cook until the eggs are just done.
Drizzle with a little more olive oil and serve it hot. YUM!

Number 2: Courgette with Chorizo, Red onion and Mozzerella

Spread your pizza base with a good garlicy tomato sauce and maybe a pinch of chilli.
Now get your peeler and peel shavings of fresh zuchinni/courgette all over the base. Go crazy and do plenty. Because it is shaved finely by the peeler it will cook super fast and be great.
Now add some fine slices of spicey chorizo sausage and a bit of sliced red onion.
Add chunks of mozzerella cheese and season with salt and pepper.
Bake and enjoy

There you have it, two vegetables that you may never have thought to put on pizza which go down marvelously!

And as a closing thought…… less is always more when it comes to pizza. There is no points pilling up your pizza with every topping choice under the sun, because it will all just taste like a big blend and you will totally lose the essence of the individual ingredients. A few perfectly chosen, good quality ingredients are the way to go. You wouldn’t wear all you clothes in the wardrobe at once just cos you like them all would you? Just a couple of pieces that look great together. The same goes for pizza 😉
